To be the TOP Bartending blogger in 2013

If you look at my blogs for this year, I had a looong hybernation period not because I was really sleeping but because this year has been so good that sitting down and taking time to ponder is really not an option.Back logs.Back logs.Back logs. Albeit, going out in bars to observe, drink, having escapades,events, having a day job and facebooking (if there is such a term) is a good excuse.

But as I searched Google to find out the TOP bartending blogs, I saw my link on the 10th or 11th.Whoooooaa.yippppeeee!!!!!zigazigahhhhhhhhhhhh This was already a fulfillment for me since I really take my hat off to the top 3 in this category. Although, I feel I can do better since we have some similarities with the topics we blog about that inspired me.Then I tried to look at the TOP bartending blogs in the Philippines and we are numero uno. Well, it is also gratifying yet it's really a no brainer since, I have always been advocating the profession of bartending in the country since 2002.
I must admit that I was a bit lazy blogging the things that is worth sharing and I even remembered telling myself that I will be  religious in blogging.
Actually, the title of this blog is just a resolution but the my main motivation is really to share my opinion and be an advocate about the best profession in the world whether part time or full time.
If I don't get it, so what???Nobody's perfect but we strive for it in our own ways.
With this said, 2013 brings another mouth watering, scintillating, freshly squeezed and hand shaken blogs that will and hopefully bring us one step up.

The First Philippine Beverage Congress




Here in the country, the Food industry has been given too much attention. But people don’t realize that the Beverage Industry is just as important and can stand on its own. In fact, we have some respected and competent people from the industry who can share their expertise so that we can learn valuable information.

Pinoytender Management Consultancy, the proponent of www.philippinebartending.com has been an advocate of the Beverage Industry and the Bartending profession in the country. With this realization, PMC, has gathered a distinguished group of speakers mainly from the Beverage and Bartending Industry. It also featured an international flairtender, a world champion and a WFA (World Flair Association) global ambassador by the name of Tom Dyer who gave a talk about the concept of “Flair Bartending” and how one can do it properly. Take note that this is the first time an international world champion has graced Philippine soil.

The Philippine Beverage Congress, is the FIRST event to put together a seminar which is composed of industry experts from the Beverage and Bartending industry. Held last February 17,2012 at Crossroad 77 in Quezon City, it’s distinguished speakers included: Mr. Doods Dayto, who gave a talk about the history of bartending in the Philippines, Mr. Philippe Bartholomi, who gave his insights on bartending here in the Philippines as an expat, Mr. Rey Navoa, touched the topic about the cruise industry being an established beverage manager for Holland America Lines, and Mr. Henry Magalona who gave a talk and a demonstration regarding coffee and barista.

After all the speakers gave their parts, the event warmed up when they were dazzled by 2 of the top flair bartenders in the country: Mr. Joseph Apostol of Mix Generation and Mr. Larry Guevara of Flair Republic and Liquid Concepts. We were all surprised when we were graced by another multi awarded Filipino flairtender Mr. Ram Ong who appeared and performed on stage along side Larry. “This event started out as a dream 2 years ago, and now it is history.”
The event was graced by students, teachers and administrators from different Hotel and Restaurant Management Schools all over the country. 
There were also some bar practitioners, bar owners, and enthusiasts.

How to pick the BEST MOBILE BAR


I was checking Google and I entered ”Mobile Bar”  I saw a lot of links already from websites to web pages compared to 10 years ago  wherein there were only 2 and one of them was not even here in the country. In fact MOBILE BAR is like a LAW FIRM on line. The appropriate term for this is BAR CATERING OR BAR HOSTING. Regardless of this information, when looking for a bar caterer what do you look for? Number of drinks? Price?Add ons?

Personnel or Bar Staff – This should be first on your list since they will be the ones making those cocktails. Professional Presence is a must from grooming and sanitation down to knowledge and skills. They don’t have to be super smart but at least they know what they are dealing with. Ideally, the staff should have at least undergone TESDA bartending short course or an HRM degree since alcoholic beverages is no laughing matter. Personality wise they should be courteous and can establish a good rapport and help liven up your party. Oh and of course they should be of legal age to serve alcohol. The service of the staff should make your event a memorable one. 

Product – If you are good with the first one, then this aspect is expected to be good as well. The product does not only include the cocktails but even the whole package that comes with it. This would include the bar set up, glasswares, equipment and tools ice chest, decorations and even the vehicle they used. Going back to the cocktails, if it was made by a professional it should be well balanced. That is the key. If your main purpose is just to get drunk and not to enjoy the mixture of ingredients, then you better just chug the liquor straight from the bottle. Mixology is an art similar to cooking and it takes practice to perfect this art. Make sure that even the garnish is fresh.

Price – In this aspect, let’s just say “you get what you paid for”. As a consumer, it is your right to compare. But please look back at the first two aspects and the value for that may vary.  If you feel that during the event, you didn’t get value for your money, you have the right to complain.

So, I hope this will help you choose the right bar host for your next party. There are a lot out there but the question is which one? Cheers!

Monin Cup Philippines 2012

Last July19, 2012, Monin Cup Philippines staged a promising competition geared towards the skill of the bartender in the aspect of mixology. Facilitated by Ms. Danee Macatulad of Savoroso, this event was participated by 12 bartenders where they whipped up their original concoctions in front of the crowd while talking.It has the same objectives like that of Mix it Up!Search of the Best student Mixologist, which is good to know since now it is not only about flipping of bottles but more importantly it's about making the BEST drink for everyone to enjoy. The judges included 3 show judges and 3 tasting judges. The champion would be sent off to Malaysia to compete for the international Monin Cup.The event was held at Society Lounge in Makati City. The champion of this competition was Paulo Eiron Layao, a member of Bar Fusion Society.Airel Mendoza was the 1st runner up and the guy to watch out for is the second runner up Arwin Santos who joined a pro competition for the first time and landed at 2nd runner up. This is so far the best competition at this category having an evenly judged competition with the placers only having a 2 point difference among each other...talk about neck and neck.  Again, cheers to Monin Philipines for this promising event. http://www.facebook.com/MoninPhilippines

U FLAIR ! September 2011


The Ultimate Bartending Competition in 2011

During the early 90’s until early 20th century, bartending competitions for students in the country has been linked with trade shows or culinary events. I myself joined a few but I was always wondering why there aren’t any exclusive bartending competitions. I was browsing through the internet one day and to my delight I stumbled upon the FBA (Flair Bartenders’ Association) which was based in the United States. Membership was possible online so I decided to be a member. This group helped me a lot because this was where I met all the top dogs of bartending at that time (and until now) and I got to interact with them even online.  It is here where I was inspired to put up my own bartending competition inspired and patterned after LEGENDS bartending competition which was held in Las Vegas, the mecca of bartending.
I was determined to elevate bartending here in my own little way through the students since no one was willing to at that time. This was dubbed LAST CALL! Bartending challenge. This was the first competition to do away with jiggers and do free pouring through “Working Flair”. We also had a “Pour test” that was a bonus round. I had to go through my list of schools, sponsors and friends just to make it happen. At first the dean of each school I went to were hesitant but with sheer determination they joined. The first year had around 50 participants. The following year it increased. Kolehiyala Flairshowdown was also born which was exclusive for girls. We had a good 4 year run. All good things must come to an end for I had to work for Holland America for 2006. But before that I designed a competition for a Major juice company that had it going for 2 years. When I came back, I judged a competition, I was amazed that the skills set of students doubled but to my dismay, the technical stuff and mixology aspect decreased. Electrical tapes were all over the bottle and shakers and. No one had a spill stop 285-50. Very alarming.
It’s been around 4 years since I organized a competition but I have been brainstorming and this was the right year to introduce a new format and bring competitions back to proper perspective. Everything fell into place and I worked with On ground activation and DKT Philippines. This year marked the beginning of a new kind of bartending for the Philippines. U FLAIR! This is Flair and Mixology combined. Objective is to make a drink on the spot in 4 minutes based on the descriptions he will draw from 2 lots. To give you an idea, one lot has the secret ingredient like mint, orange, and banana. The other lot contains descriptions like “something fruity”, “something potent” and the list goes on. Why this kind of format? Well, in a real bar situation, a guest will come to you not knowing what to drink. The usual bartender would just recommend any drink out of the bar list. A professional bartender on the other would ask the guest what flavor he likes and from there derive and create a personal drink. I didn’t copy this from any other competition. I just thought that this is what service excellence is all about. So I wanted to make students experience this since they will be doing this when they are in a real bar.
U FLAIR! Had around 50 applicants which were trimmed down to 36. These were then spread out into 3 venues: ICON, Club Phi, and Eivissa Super Club. The Grand finals was held at Dolce Superclub. 

I missed the competition scene especially the briefing part. This is where I get to gauge how the competition will be based on their questions and comments. (Include list of students)This competition is not the only first to introduce a new concept for 2011, it is also the first to give away a PORTABLE BAR as GRAND PRIZE as well as ORIGINAL FLAIR BOTTLES as trophies. We had resident judges who were all prominent in the beverage industry in their own right. I had no chefs as judges in a bartending competition of course. The first heat at ICON was pretty tough for it was their first time for this kind of format. The judges would say were understanding but they didn’t compromise the objective of the competition. The winners of this hat were probably the ones who were focused since most of the contestants forgot to put garnish on their creations.
The second heat was held in Club Phi at Metro Walk Ortigas. The venue was bigger and the competition mode I would say was a bit prepared compared to the first which was understandable.
The third heat was done at Eiivissa Super Club at Tomas Morato. Here the main challenge was the celing forit was too low for a bartending competition.Another one was the strobe lights right above  the stage for this made some of the contestants’ move restricted. Nevertheless, they were still able to show case their metal and it was a pretty good performance by everyone.

The GRAND FINALS was held at Dolce Super Club. The execution of this one was splendidly done having a technical as well as a stage director to oversee the details. The duration of the event was like American Idol style for each contestant had an introduction video before they were introduced.
 Another highlight of this competition was the reintroduction of the POURTEST using an authentic EXACTO POUR unlike some competition that only used “TEST TUBES”. I hope this round of the competition should be present for all those who wish to come up and produce a competition themselves for this is the basic skill needed for WORKING FLAIR.
It was a nerve wracking atmosphere during the FINALS for people had no clue who was gonna win since it was  the first time to have this kind of format.
The distinguished panel of judges during the Grand finals were: Dax Jaurigue of Source Asia Business Inc., Philippe Bartholomi of Century Park, Roderick Sorino of Princess cruises and The Brand Manager of DKT Philippines Mr. Norman Campoy. I would also like to acknowledge the other judges during the elimination round which were Henry Magalona of Philippine Barista Guild and Rey Navoa also from Source Asi a Business Inc.
To conclude, I personally hope that this competition maybe a learning experience. To be a professional bartender we need to know the basics and constantly enrich ourselves with knowledge for as they say “ Knowledge is the best investment”

Philippine Food Expo

I would like to take this opportunity as well to thank I-Cut Unlimited for organizing and letting us work with them this year and staging the first MIX IT UP! Wanted the Best Student Mixologist held at the World Trade Center last February 26, 2012. This is the very first competition for students that has a format of a "Talking Bartender" It's harder that it looks believe me, but we thought of this for the very reason that bartenders are supposed to be the "Elite" in the F and B industry.This will give the students an idea of how it is to make a well crafted drink while teling the guest how it's done. The first champion of this competition went to Ms. Denise Banzon of PUP Sta Mesa who walked home with P10,000. Who will be the champion next year? Let us find out.

Hi Guys!
